ONE of Leigh’s oldest cockle fishing families have opened a new seafood hall.
The Osbornes have run a cockle shed in Old Leigh for more than 100 years. Following a major revamp, the shed has been transformed into a seafood hall selling wet fish and accompaniments along side their traditional shellfish.
Sally Osborne said: “We are now selling a huge range of wet fish as well as smoked products, and fish pies and fishcakes. There are also products that compliment these products like oils, rubs and sauces.
“Fishmonger Perry Burleigh will be running the seafood hall. He is very experienced and worked at Harrods seafood hall. He’ll be doing some amazing displays.
“It seems like a natural progression to grow the business.”
Sustainably sourced fish will be stocked along with artisan products like smoked salmon from a Scottish producer.
The cockle shed has been refitted with a kitchen to the rear which is visible to the public.
